
It is no surprise to anyone who knows me that my signature dish would be a dessert. And this is the dish that I'm not allowed to come to our Thanksgiving dinner celebration without. And if my brother does T-day with the other side of his family, then I have to make it for Christmas too. (the other dish I have to bring is a Caramel Apple Pie). I'm really only continuing on my mom's tradition of this recipe as it used to be required of her to make. It is really tasty and I'm not even a pumpkin pie fan. It is probably so tasty because it is so not on the WW points plan unless I didn't eat for a week. The photo of this doesn't do it justice, I must have let the Cool Whip thaw a bit too long that time.
Layer 1: 1 1/2 cups crushed graham crackers, 1/2 cup butter and 1/2 cup sugar. Mix and press into bottom of a 9x13 inch pan
Layer 2: In a bowl mix 1 (8oz) package cream cheese softened, 2 eggs, and 3/4 cup sugar - beat until smooth. Pour over graham cracker crust and bake for 20 minutes in a 350 degree oven.
Layer 3: 1 cup pumpkin, 3 egg yolks, 1/2 cup sugar, 1/2 cup milk, 1/2 teaspoon salt and 1 teaspoon cinnamon. Cook until thickened (about 8 minutes). Dissolve 1 envelope Knox gelatin in 1/4 cup cold water. Stir that into cooked hot pumpkin mix and then let cool. Once it is cooled, beat 3 egg whites, adding 1/4 cup sugar gradually and beating until stiff. Fold into cooled pumpkin mix. Pour over cream cheese layer. Refrigerate. Serve with Cool Whip.
